Your doors are beautiful. You could sand and restain or just put a polyurethane on them. I wouldn't paint them.
Because they are in good condition and super wood I would only consider either using a darker coloured varnish.

Looks like you have two different kinds of wood between your cabinet and photo. One is naturally darker than other.I am not an expert but here's what I would do. Sand your cabinets well so there is no sheen, wash them and let dry. Then use a semi-opaque wood stain in light color. You should test this on an area before doing. This should allow some wood grain to show thru while offering a lighter surface color. Good luck!
