If it's baked on food or grease, it depends on the finish in the pan. Start with hot soapy water and let it soak, unless it's cast iron. Then,depending on the finish, you will want to scrape as much off as you can, after it loosens. A good scrubbing with a steel wool pad like Brillo will get most things off metal. Porcelain or non stick finishes require a gentler touch so you don't damage the finish.
Simmer water and vinegar in the pan for several minutes. This will lift off burned food. Then simmer again with soapy water. This should come clean as it cools. Don't use this method on cast iron.
Easy Off oven cleaner. Spray a liberal amount on the pan and let it sit 15 minutes. Rinse it all off. Then add warm soapy water and scrub with a Brillo pad. This will work on everything except aluminum pans.
