How do i build a wooden counter top for an island?

I have a vision of a project involving turning the top of a tall hutch/china cabinet into an island. I want to create a wooden top for it that will have legs on one end and be attached to the cabinet on the other. I don't want to use just a plain solid sheet of plywood for the top but want to add either tile or make a butcher block top for the top surface but I don't know how to go about making the butcher block top. Please point me in the right direction on how to make a food safe butcher block top so I can bring my vision to life.
