Did you know that daylilies are as delicious as they are beautiful? Spring shoots can be cut and fried like pea pods.(Don't worry one cutting will not take away any of the beautiful blooms) Flowers (stamen removed) make delicious additions to salad (taste like a sweet lettuce) or can be stuffed with egg/chicken/tuna salad.

I have no problem eating fiddlehead ferns but I'm not sure I could bring myself to snip the first shoots of a daylily.

They are most exqusite sauteed with a bit of butter. The daylilys rebound in no time.
