What is this plant?

This plant is a volunteer that I thought was Celosia, but it's way too tall and hasn't bloomed, so I might just be growing a weed. In addition to this one, I have another that's probably 3 feet tall and everything on it is larger, but otherwise the same.

    @Jeanne this looks like jamaican callaloo bush. It's leaves can be cooked just like spinach. The flower to the top has many seeds and will spread quickly. Before the summer is over you might have a field of them. Get confirmation before you try it for dinner.

    At first thought it was poke berry but the flower part looks wrong.

    I think this is wild amaranth.
