I use a toothpick under the edge I am cutting, cut just before the toothpick so the toothpick is able to be removed and replaced in the same fashion
I take a twist tie to put under the end of tape and then fold the ends over (like a bag of coffee has to close package).
Simple just fold it over on itself.
Go to grommet.com - they sell a tape dispenser/cutter tool to put on your tape roll. They have it in 2 inch sizes for the packaging tape, and 1 inch (I I think ) -they do have 2 different sizes. I don't know how it works, but somehow the end of the tape doesn't stick down again after you use it. (I have one - tried it).
One of my best investments was a weighted tape dispenser that can hold one roll of 2" packing tape or two rolls of 1" packing tape. There are two benefits: you don't have to hunt for the end of the tape, and you can use it one-handed! It can sit on the table or hang on the wall. Price runs about $18, so if you find yourself throwing away several rolls of tape a year because you can't find the ends, it will pay for itself.

Use the flat tabs that many of our purchased items have, bread bag has a tab. Roll out the amount of tape you need, slap THAT tab up against the other end(the end you will cut), cut to the left of your tab. Viola, the tab prevents the cut end from pressing against the roll and causing all the problems.
