I backed one up to the side of the refrigerator making it an open storage unit and hiding the refrigerator.

This is pretty old (about 40 years old). Dad took a long book shelf added wheels to the bottom. Added slider brackets to the top and bottom. Cut doors to fit. Cut the shelves a little narrower so the doors would close. Painted the whole thing white and added some linoleum to the top. He used small metal cups as pulls to open and close the doors. To make it more attractive, he added a "sliver" metal trim.

like this concept, but I am not a builder of any sort, so this only thing I could do would be to add curtains instead of a door..the wheels would probably work, but it's cheap particle board.

IF you already have picked the place to put it... You can add doors, pretty mouldings, maybe sew some pretty curtains to hang over it. Paint it a colour that will accent the colour of the kitchen.
