Preserving Eggplant

With cold weather coming, it is time to bring in as much of the harvest as possible to store for winter. Eggplant produces well throughout the summer and well into the fall, and can often be very prolific. Eggplant doesn't can very well, but it can be frozen or dried to preserve it.
Because eggplant is so dense it does not can well. It can be frozen or dehydrated for longer storage.
Eggplant should be cooked before freezing. This can be done by roasting, blanching or other methods.
Make sure to get all the water out of dehydrated eggplant to prevent mold from growing.
