Making a kitchen bar

I want to make a kitchen bar, taking off the white tiles, and extending the 6" top to make it wide enough so that I can put two barstools there where we can have breakfast. What would be the best idea, laminate? big tiles that are the same color as my backsplash ( which are different colors of brown, but on top of white tile), or something else? What would be the least expensive? I am planning on doing it myself. Thank you for any and all replies!
