In the shower? Bad idea. In the room around it? Been done forever. Just visit Cape Cod. Prep, prep, prep. Seal Inside outside back and front and on all sides *before installing*. Best to have in a room well ventilated for best long lasting results.
I wouldn't ..there are so many nice wood look tiles on the market now ... wood and water or moistrue .. really don't mix well..
Is the tub a freestanding tub with the shower in the tub area like a clawfoot with shower with curtain around it etc. & you just want to add the shiplap on the wall in that room, yes that can be done.
If you want to add shiplap in a shower area where it would be constantly soaked with water from the shower, that would be a different story.
If you're just looking for "The Look" of course tile can be used but I don't think it comes in longer lengths & it's expensive.
I don't know if vinyl flooring would work or not but it comes in shiplap looks and in sheets like 6 to 8 inches by 3 foot long etc. You could also look for a wood that does well in wet conditions like teak.
I would start by talking to someone that deals in wood products.
