Can you buy a peice of wood at a craft store and paint the background whatever color you'd like, and stencil in the letters with paint? You could use magnet tape to attach it to the fridge as long as the wood weren't too heavy

weight could pose an issue. You could also use posterboard and get lettering stickers (all from Dollar store) and put it up with magnets. Michael's sells some super strong magnets that are really tiny. They should do the trick. If you get the foam board you may be able to put push pins into it as well. There are plenty of boarder stickers and the such that you can use if you don't want to trust your painting skills. You could make several small ones or divide up a large one to section them off as well. Gluing embellishments to them would be fun too. Or an old picture frame, just take the glass out and make sure it's not too heavy, add a piece of poster board or an old sheet of plastic can be stapled to it as well. (Dollar store shower curtain liners come in handy here). And then same principle. Good luck!
or you could use washi tape and section off your fridge and then just use magnets to put what you want up inside those sections.
