There are many many types of elephant ears of varying sizes with leaves as large as 12 feet, shapes and , yes, colors, including deep blackish purples. The one in the picture looks just like the most common variety I have growing in my yard. I love them all. Yours look beautiful and healthy. They add texture and dimension to caladium garden. I have an area in my yard that holds water. I had deep purple elephant ears with 4-5 foot stems and dinner plate sized leaves In this boggy area. They were beautiful and interesting. Google exotic elephant ears....you will be amazed.

Be very careful cutting back Elephant Ear. The cell structure of the sap is covered by barbs similar to a fish hook. They attach to the skin and burn like the worst jellyfish sting ever. The CDC instructed me to shower thoroughly in cool water and apply Cortisone cream liberally. Use cold compresses to ease the pain.
Wow! I've never experienced that either and have transplanted many, and constantly cut off wilted stems, etc.
I too wonder what variety you had such an awful experience with-- bc Yikes! How awful for you! Should you ever run across a picture of that plant, please post it!
