When you use vinegar, is that instead of the salt+ lemon? I'm excited to try this!
Use the vinegar with the salt instead of the lemon. The acid cleans the board.
lemon is acid too and smells better doesn't really matter but you need to clean them frequently because they can harbor things like salmonella and E-coli if you use to cut meat and chicken
Yes lemon is an acid as well as vinegar, that is why it is interchangeable. Although it will not work with a lime or orange.
I use listerine

Working in a kitchen and graduating as a chef, we always bleached the cutting boards.
I have a butcher's block in my kitchen, I bleach and sand on occasion and seal with food grade mineral oil.
You have to be careful with your older butcher's block. Just use what grandma used. Forget all these "new found ways" because you might separate your wood. Why fix something that isn't broken. A good butcher's block should be make of hard white maple.
