I agree with Janet! Short of painting them, removing them would be the only option.
Well does it make hard to be in that room? Does your mood change? Then remove yourself slowly but great satisfaction, You failed to say how much area is it just under cabinets? Do you already have what you want picked out in your heart. Can you install that yourself? Keep this experience in mind. I stick to paint. I love subway tiles in pure white that butte up so minimal grout yet won't, due to grout. If you take it off find someone to install nice proper drywall for what's going up there. Otherwise consider a whitewash over bricks. Less in your face you know.
I also love the idea of painting, chalk paint will adhere to almost all surfaces!
This is a bit "out there" but, have you thought of thin sheet stainless or aluminum?
There is a type of paintable wallpaper that is intended to cover up wall paneling. It might work for faux brick as well. When properly applied, which might require a professional installer, it would look like drywall after painting.
I just saw a possible solution on The Family Handyman website. It's called whole wall coverup and is available at home stores and on line. According to the info provided, it costs about $16 per roll. You may have to first fill in the gaps between the bricks with something (wall mud/joint compount?) to obtain a somewhat smooth surface for the cover up to adhere to appropriately.
