I would leave them natural and seal with a non-yellowing polycrylic available in all finishes.
You can use a stain to bring out the natural grains and keep the natural looks and feel of the table.

If you like the look, you can use tung oil or another oil for a natural look.
If you had to do the work then keep it the way you want them! Maybe next time he will help.
If you love the natural look, Minwax Polycrylic, like Janet suggests, will seal the wood, but bring out the grain. Or you could stain them a light color and seal with Polycrylic.
