I am a bit perplexed as to how you will remove the backing to put anything in between. But the mirror is good idea, but may crack if moved or heated. A nice marble or even faux stone piece also nice, You might get by without taking the back off and commission someone to paint a mural on it or just on another panel to reattach. If not to be used, a nice fabric piece may work as well.
It would make a magnificent headboard!!!

How do you plan on using it, or is that part of the reason for asking for ideas?
Removing the mesh and replacing it with mirror (glass) might limit how you can use it. 1). It will be more fragile with a greater chance of breakage.
2). It will weigh quite a bit more, needing stronger means of support.
If you choose to go ahead and add a mirror, would you be satisfied with a faux mirror (or polished stainless steel) to cut down the weight and be less fragile?
Another suggestion - use a light colored wood such as Douglas fir or Cedar behind the metal fire screen, minus the mesh. Cleaned up it may or may not need a fresh coat of paint. (depends on your taste). Leather behind the metal?
Possible uses: Headboard as suggested by Hillela G. (I really like that idea!)
Backrest of a bench . Front face of a snack bar. Framed as a focal point above the mantel. Is it strong enough to use as a pot rack or utensil rack? Perhaps as the upper portion of a bakers rack.
Simply remove the back, paint the front part, and hang it on a wall. You get either a nice wall decoration, or a photo place to be use with wook clooth pin, painted or not.
You can also make a nice claustra with the front part.
Your fireplace screen is lovely. I like your mirror idea. I would paint it, put the mirrors on the back and use it in my garden. If using it as a fireplace screen, I would check at a glass store and buy TEMPERED mirror glass. Not cheap but will withstand a certain temp. I had a Ball glass chain lamp explode a 50 cent size piece due to the Arizona sun in the summer. It needed some place for the heat to escape.
It would also be beautiful with your mirrors hanging above your fireplace!
I was thinking mirrors in the garden. Certainly not going to use it as a fire screen.
How about part of a daybed in the garden or between wood posts for a gate? Maybe use it under the edge of an overhang on a kitchen island. You could still add mirror if you want. It's a lovely apiece ns your options are as many as pieces of furniture or art pieces as you can think of.

Take the side pieces off and then space evenly along a long wall inside or out! I'm a big fan of either crackle paint or just rub a color into it for enhancement. If you using outside, you could hang votive holders to it for a dramatic lighting effect.
