I am not an expert by far ,but I would not paint paint blocks
I don't advise it because there is no food safe paint. If the block is only painted on the bottom and sides may not pose a problem. As long as the slots are not painted. But then it wouldn't look right. Mineral oil or salad bowl finish would be alright once its cleaned. I use mineral oil on cutting boards I make. Vegetable oils go rancid over time.
Thank you both for the input. I thought it might not be safe, if continuing to use it as a knife block. Perhaps I'll just do as some others have done and make holes instead of slots, paint it, and repurpose it for something where food wouldn't make it an issue.
