How to Clean Rusty Cast Iron Pans
yup, the above link how to.. will get it cleaned up. now once clean....you will need to re-season the pan. i like olive oil personally- a puddle the size of a 50 cent piece.
when the oil sizzles- take a paper towel and oil the interior of the pan. let cool. wipe off excess oil.
as for what to cook in it...the fry pan styles- any thing you would put in a fry pan. the kettles will slow cook a stew to perfection. and, i've also baked birth day cakes and rolls with them over a campfire. have fun experimenting!
Let me send you to the expert that even Cooks Illustrated magazine hales as the greatest way. www.sherylcanter.co She uses flaxseed oil which makes the surface nearly indestructable. We found her site about 5 years ago and only cook with cast iron on the stove top. And, it is stick free. A recent article I read does not recommend cooking with olive oil in high heat.
After going through a bunch of different brands of alleged "non" stick cookware, I finally went back to the good cast iron I grew up with, Oil it like crazy, get it smokin', outside on a grill works good if you can. Get it black, leave it black.
That is key. When you wash it, if it feels smooth and does not act greasy, it is clean. Very important - do not scrub the black off. You will love it, and once you get it right, it is forever. No more Teflon in your food. And you can use REAL utensils, not that stupid plastic stuff.
Try the cast iron skillet in a self cleaning oven and then reseason it. A friend had a house fire and his skillets looked ruined, I put them in my self cleaning oven and they turned out great.
If the rust is really bad you can use a wire brush on it. Seasoning after cleaning is very important and there are several ways to do that. To keep it from rusting again, try not to use soap and water after use unless it is very dirty. You can just wipe it out with a paper towel. If you do use water, make sure to thoroughly dry it and oil it again. I have used cast iron for many years as have many in my family tree. Cornbread is awesome baked in it. Good luck.
Ok. Oil on the bottom add same amount salt. Have paper towel or paper bag. When it gets hot scour salt and oil together around the rust. Cool and do not soap. Keep potholder handy. If you have to just plain water. Do not soap it. Repeat oil and less salt.
