Removing old counter
I don't think the backsplash has to be the same as the counter. I actually like it when they are different - it adds more interest. I like the look/functionality of quartz counter tops and a glass backsplash. I prefer to use materials that require little to no maintenance and are easy to keep clean - smooth surfaces are so much easier to clean. Go to a specialty store for counter tops and backsplashes and find the color/material you like for the counter top then play with different backsplashes to see what looks the best to you. FYI, the darker the counter top is, the harder it is to keep it looking clean - dust and crumbs are incredibly visible on a darker surface.
However, mustard and curcumin easily stain white countertops.
It depends on what look you want a neutral or an eye catching one. If neutral keep colors in same palette and yes do not pick a counter top that is too busy because you don't see crumbs. If you want a busy happy eye catching kitchen then keep the least expensive item neutral and the other one in your favorite color. I personally love subway tile. I just hate grout, right now I have no backslash just paint that I can clean easily. I do have busy counters and hate them, but we have only had them for a year. I like laminate it's easy to clean but would change them out if I could. This is a big investment but if your planning on being there a long time then you should go for color and enjoy. If your moving within 5 years stay neutral.
