Story of my life! Some things that help us:
- shelves, shelves, shelves! We put them everywhere to keep clutter off the floor
- we use vacuum sealed bags to store my kids clothes as they grow out of them, and put our clothes that aren't I'm season away.
- We actually got rid of our desk because we realized that we didn't use it to work - it was just a place that collected clutter.
- Almost anything that you attach to your wall can be fixed without a big fuss - so shelves, light cabinets, anything you think can help, are usually ok for renting.
Sort everything. Anything you haven't used in a year you really don't need. Get rid of it. Next, some apartments will not allow hanging shelves. If you can attach them with command hooks. Store things under couch, bed, and on top of all cabinets and refrigerator. Also, you can make things pretty using tape and it will not damage walls.
under bed storage "drawers" are great. You can also DIY or purchase coffee table with storage. Lace paint an old dresser and use it for linens, paper, books, or whatever.

over the door pocket shoe hangers are great for storing lots of stuff.
In kitchen cabinets, those coated wire shelves that let you stack dishes of various sizes, or stack two tiers of smaller cans, etc., when you can't change the shelving. They also make them for pots and pans, etc.
