Sorry got cut off what finish would you recommend?
Walnut is not that good of a wood for countertops. It tends to absorb moisture into itself unlike Maple or Oak. Also it expands and contracts more than other hardwoods. This makes it hard to finish/seal as a countertop. A Walnut table or chair can easily be sealed with mineral oil and tung oil, but would not work for a countertop. Waterlox or General Finishes make good finishes/sealers for Walnut.
Walnut oil
A good food grade wax, put on no less then 2 coats. Also try asking HGTV "Property Brothers" they did a wooden island top recently. I have a walnut cutting board my daughter made me in the 70's and have never had a problem with expansion/contraction and its had a lot of use.
I would use either a food grade oil or seal them up with a product called Waterlox that gives the wood a durable finish.
