For what purpose?
First you must measure the space that you intend to cover. Be exact, this step is important. Then find the the tiles you wish to use. The people at the tile or home improvement store will be able to tell you how many boxes you need to purchase and what products to use.
Are you asking how high the backsplash should be? if so, there is not really a set height. I have seen backsplashes go up several inches, up to the bottom of the cabinets, all the way to the ceiling, and up also that have no cabinets on them. It depends upon what you like.
