You could install ship lap or beadboard floor to ceiling to cover all the brick. Then add that chunk of natural wood for your mantel. I'm with Lynn, check out Pinterest for ideas and how to's. Best of luck.
Yes, you can put a fireplace surround on your fireplac, it was done all the time that's why there are so many antique fireplace surround. Styles change and people change their homes to go with it. Like William said no wood within 6" of the opening and no paint that's not for fireplace and high heat areas.

I am going to do the Shiplap, keeping a 6" gap around the firebox. ( which will actually look nice with some black stone and a big stone on the floor in front) Then I can have my chunk of old beam on top!
