It's totally doable!! Do you want to completely replace the flooring? Or just insulate?
Rip out what is there now, use spray foam on trailer frame, put plywood floor over that & screw in really well. FIll in joints & any flaws in the wood & sand down smooth. Then lay one piece vinyl or vinyl wood-look planks or carpet. Time consuming, but not really difficult - the spray foam could be your biggest cost, depending on trailer size.
