You can strip and sand down to raw wood then stain. Or you can lightly sand, prime, paint, and seal.
Sand old varnish off and if you don't want to stain, revarnish with a non-yellowing varnish.

Just keep in mind that pine is a fairly yellow wood to begin with. It varies a lille with specific specie but they almost all are yellow to some degree. If you have Southern Yellow Pine you will likely have to paint or stain if you want ALL the yellow gone. Having said that most of today's finishes don't yellow quite as badly as some we used years ago. And virtually all finishes yellow at least a little. But the previous poster is correct. You do need to spend a little more to get a topcoat the yellows minimally.
