There are some really nice peel and stick tiles that look like backsplash tiles.
It depends on your budget. There is tile in all kinds of materials, finishes, colors. I've seen people install curtain rods under the counter and hang their favorite tea towels. I've seen wallpapers used. I've seen tin tiles used. I've seen the decorative styrofoam ceiling tiles painted or stained and used. I've seen people use copper or stainless steel and punched a pattern on it. Think outside the box for ideas
