How do you harvest Lavender? Which part do you cook with? Sachet?

    You cut the bloom stalk at the 3rd leaf set. For a sachet, you have to harvest the lavender, tie it into a bunch and hang it to dry. Once it is dry you can gently roll the buds in your hands to get the flowers off the stems.

    For cooking you need the flowers.

    The fresh or dried leaves are more commonly used in cooking (rubs, herbes de Provence, etc.). If a recipe calls just for lavender, it's probably safe to assume it's the leaves.

    The dried flowers are used for infusions: herb tea, flavoring honey or cream, etc. The fresh flowers are usually used for garnishing.
