First, why? I take it you will be relandscaping? Is there any reason to do all at once?
I would work in sections. Cover everything in landscaping fabric and newspaper and do not water. Then when dead it will need to all be dug out, composted or disposed of. Then you can plan and re landscape your space.
Or you can use commercial chemicals, but check with whatever you are using, so you know when you can replant.
Or hire a local gardener or landscape service to do for you.

I would just dig it up and then you can do what you have planned . You can hire someone with a excavator and they can scrape off your lawn pretty fast . Or post that someone can have the sod if they cut it and haul away quite a few people do this where I live and have good luck
