Cut in down to 2 inches and skin the outer green off of the stalk. Spray it with Roundup and keep doing this until it dies. When new shoots pop up, follow this same procedure. When you see the runner roots do the same with them. It may take you 6 months but it will work. I did it.

I would use vinegar instead, less toxic to the environment. I suggested to one of my neighbors who was looking to clear a hillside, he said the vinegar worked better than the roundup - plus it is cheap, especially when purchased in bulk at Costco, Sam's Club, restaurant supply, etc.
You Have to remove/kill ALL of the bamboo . Bamboo is a grass it sends underground runners and then sends new shoots. your shovel and a kill solution Every day carefully dig up any shots you see and apply your kill solution. It will take months for you you to get rid of the bamboo. if you leave just one shoot you will soon have a bed full.
It's best to cut it down, spray it with round up or vinegar (whatever you prefer) and dig it up in the winter. In the winter, it should stop putting up shoots.

Okay, so it's been 45 years and environmental concerns have changed. Bamboo was taking over the back side of my mother-in-law's yard, filling up the septic line and pipes. We dug roots over and over, not making much progress from one year to another. Finally we did what the old folks said and burned the cane, at the end of summer and at the beginning of spring, even using gasoline. After two full years, the cane was gone and didn't grow back.
