It is best to take up the baseboard molding. Makes for a "cleaner" installation. Undercut the door moldings as well.
Yes, it can be done carefully to save you from having to replace the molding. The molding will help anchor and hold the flooring in place. Good luck!
When we pulled up our carpet to put laminate down, the moulding was 1/4" higher than the subfloor, so we were able to slide it right under the moulding. We then put quarter round on the baseboards to give it the finished look

Laminate flooring needs to expand so be sure there is a quarter inch gap under the moulding. The installer then put quarter round on to cover this gap and it is very loosely nailed on top of the moulding....floor can expand and contract....if there is no where to go the floor will buckle up.
