So exciting to do a makeover! You can definitly leave the doors natural, just use a color that matches nicely- maybe a toupe, or natural- you can usually use chalk paint to paint over vinyl or you can sand it down to have a fresh start- good luck!
Try getting it warm with a hair dryer on low heat. It should peel right off. Then sand it lightly.
Auhhh, the great manufacturers cover up for particle/pressboard cabinets! Vinyl is what you are looking at, sanding it lightly will allow the paint to stick better; removing the vinyl will allow a different surface, but one must be careful. Particle board leaves dips & gaps in the surface that will show up; pressboard will absorb the liquid of the paint & swell up...leaving bumps & rough spots on the once smooth surface-sanding would be required to re-smooth it & apply additional coats of paint. Maybe your best bet would be to use the chalk paint method.
