You can paint over them! If you're looking to switch up the look of your kitchen, there are really great granite countertop paint kits, as well as cement kits.
When I worked at The Home Depot, we did a workshop on resurfacing counter tops. We used Rustolium brand, and they came out beautiful! It is time consuming, as you have to allow dry time between coats, but the end result it worth it.
