I would. It'll help protect your paint from the grease that will float in the air and attach to it while your cooking, plus finger prints etc. It will make them so you can wipe them down without damaging the paint.
At least three coats of a water based polyurethane sanding in between coats with a green Scotch Bright pad or similar. Use a foam brush to apply the poly. No brush marks.
