The best thing to do is first kill the grass and then remove it, this guide is really helpful for giving an idea of how to get started
You can rent a sod cutter and then it's very easy to lift up the grass (if you want it done right away). Otherwis, I agree with above. Lay plastic or layers of newspapers weighted down on the grass intel its dead. Then rake up dead grass. Laying the slab is the hard part!
Ensure your area is level after grass is removed, then dig down & add thin layer of gravel, then another layer of fine sand. Tamp down lightly (level out again). Lay out your slabs (using extra sand in corners to keep them level) with narrow spaces between. Use special compound sand between slabs that sets like concrete & inhibits grass growth & ants.
The digging is the hardest part. Just take your time and dig carefully to get all of the sod out first. Then, I would recommend laying a couple of layers of cardboard over the spot and leaving it there for a couple of weeks to kill off any remaining grass seed, weeds, etc. Water the cardboard to keep it in place...or pin it down with yard stakes. Then, proceed with laying sand, gravel and your pavers. You can actually leave the cardboard under the sand as it will turn to compost eventually.
