When/how do I prune some 3 yr old espalier apple and plum trees? Thanx
I don't know which area to prune. The plum especially has long up-growing spurs at the top. Are these what I should be training onto the wire or cutting back.

Not being flip, but Google it, in images. Each tree requires different pruning. Aren't they leafed out by now?
Pruning fruit trees should be done before bud break. You can do corrective pruning any time, but it may affect fruit production for this season.
