Welcome to my world. I feel for you. And I am 5'10" to start with, everything has been to low for me always. I have the same problem and I just have a builders special bathroom(s) and my first back surgery was in 2008 . . . Short of yanking out and redoing I don't know what to do either.
Since you have a custom bathroom, what I would do would be to pull the vanity out. Put down new flooring. Find or have made, feet or legs, wharever looks best, and placed on existing vanity and reinstall. If you have mirror(s) and / or lightsvabove the vanity, those will be raised too. Hopefully, that would not cost too much money. Just the first thought I had . . .

I too have low vanity and cabinet. I plan to have the marble top lifted place a lumber border on top of the cabinet and replace the original vanity. I just need a plumber to install the plumbing.
