Could be the lighting as you said. Might be whatever the cabinets were sealed with when manufactured and it yellowed over time.
Try and see if it is just the lighting, lightbulbs are much easier to replace that repainting the kitchen cabinets.
If that is not the case, you just might need to repaint. I will keep thinking and see if I can come up with another reason as to why this occurred or a possible solution.

My guess is that the sealer is what has yellowed. (Was a polyurethane put over the paint?) Some of them will yellow.
I agree with Debbie that it could be the sealer used. The good news is that you can paint white over the cabinets and seal with a non-yellowing sealer. I like General Finishes High Performance Top Coat.
