If the nick is sharp it can be smoothed out with 180 grit sandpaper or an Emory board. Otherwise patching Formica is possible but not easy and it would look patched.
I had a chip out of my formica top so I used some white silicone glue to fill the hole and its looks great. Hard to find the chip unless you knew where it was.

Silly as it sounds, I tried a beige craft paint to fill a Formica hole in an out-of-the-way area and its holding so far.
