There seems to be many opinions. If we paint the kitchen cabinets white, won't they turn yellow over time? Does chalk paint perform better?

It is all in the paint formula. Visit a proper paint store and purchase paint that has the proper UV protection.
Use acrylic latex paint. Remove the doors and hardware. Mark the doors and cabinets with tape where they go. Lightly sand the doors and cabinets to remove any gloss and roughen the surface for paint. Prime with a stain blocking primer like Zinsser 123. Then paint with your color. Seal with at least three coats with a water based polyurethane. Use a small foam roller and foam brush for a smooth finish.
There is nothing on the market that will NOT YELLOW. They may say they do not but they do. Refinish and enjoy and you will not notice the aging because it is gradual but it will happen. By the time you notice it is time to redo them again anyway.
The yellowing MIGHT be caused by the cooking in your kitchen. Sautéing, frying, and even boiling releases anything in your cooking liquid on your stove or even in your oven. If you use a polyacrylic it's much easier to wash your cabinets that gradually discolor. Most polyurethanes do tend to yellow over time (or so I've read) One of the projects on my list, is to do mine over and include a sealer (I had them done professionally but they didn't do that.)
