I would look through some kitchen remodel magazines or websites to get ideas you like.
A typical backsplash goes up to the cabinets.
You can stop when it meets your cabinets. If the room is large enough and you have an empty wall you can run it up to the ceiling. It's really your choice.
Grouting that looks professional along the top, bottom, and between tiles will make a huge difference in how your job is perceived. Best wishes 😇
