It sounds like the water pressure is too high for the new handle- There are water pressure test gauges you can purchase to test the pressure yourself, or you can hire a qualified plumber to test your pressure for you.

And the water might be not coming out hot bc it could be a blocked-up heat exchanger... from when you changed the handle
Could also be air in pipes from the change. Run only hot then cold to see if it helps settle the problem. Kind of like bleeding brakes after putting new shoes on car. If that does not work try a re-do to check for loose fittings. If you did nothing more during the change than cut water supply the pressure would not have changed.
I replaced my shower and faucet last year and found that the new fixture has a scald protection mechanism on it and only allows so much hot water to come through. I pulled it out and readjusted it. Now my son can boil the nasties off of himself, if he's not blistered when he steps out of the shower, he just isn't clean according to him. I don't know if they are all the same, just look up your brand of faucet and scald guard, many videos out there to help you get the job done.
