Leave your green tomatoes on the vine. When the cold weather arrives, pull the entire plant up roots and all and hang them upside down in your garage or a protected porch. They will continue to ripen on the plant for months! I have done this for years.
Why are you tossing green tomatoes? Fried green tomatoes are delish! Or place in a paper bag in a cool location and let them ripen. Or leave on the vine and let them ripen naturally there too.
I agree with Naomie! Good eating! I also put them in paper bags in a cool dark place to ripen them. I don't do it to the small tomatoes, like cherry or grape.
Look for a good recipe for green tomato chow chow. You add it to dishes for flavor. And the paper bag in a cool place will ripen them faster. FACT: Tomatoes do not ripen by sun. They mostly ripen during the night.
