I would personally use a water based latex with several coats of non-yellowing water based polyurethane on top.
Recommend semigloss for future clean-ability.
Any water-based latex should work. Depending on the look and style you like, I would recommend either satin/eggshell finish or semi-gloss finish. The semi-gloss will reflect a bit more light and be easier to wipe clean.
