Surround it with lattice on all four sides

Build a lattice fence around it to enclose it.
pinterest has some cool ideas. I've seen some even use pallets to cover/design something around the a/c unit.
Flowers! Beautiful tall native flowers for your area planted around in a bed around it (not immediately up next to it of course but about 5 or 6 inches away from it on at least 3 sides). Use a "short" trellis to help support them.

You have to leave plenty of room for air to get in, some warranties are void if you enclose it as they may not get enough air circulation.
I would use lattice, and no flowers near the unit.
