Mint is a very quick spreader - I hadn't realized this, so I initially planted it right in my garden. The first year it was fine, but the next year, it was popping up everywherr. To get rid of it, I had to follow the root system under the dirt and pull it up that way. The roots of mint all connect under the soil, so it essentially becomes almost like one gigantic plant, and if you don't get all of them out, it'll continue to grow back. Lesson learned - I now only plant mint in pots!
Christy is correct! I only grow in pots for this very reason. Sorry you had this happen!
Make sure you start deep a bit away from the plant you are digging up so that you can keep from breaking off the root and not finding the rest that are traveling. When I dug mine up to control it in the garden I found that some roots went fairly deep. If you still want your mint, find some of the smaller healthy plants with roots and plant them in a pot and eradicate all the rest in your garden. With all the different types of mint out there, you could do a grouping of mint pots.
