You don't tell us what you are thinking of doing or provide a picture which would be helpful but for starters you could change the color. You could add glass or other type of inserts.
what style coffee table? A pic would be helpful. I am currently taking a plain wood table with somewhat ornate legs,that was painted black, raising it up about 4 inches (it was rather short) and sanding off the pain on the top so it's black frame and legs and natural wood top. I've redone a mid century modern with terrible plastic veneer so that it was a really shabby chic look in gray tones with a fleur de lis on the top. I've done hand painted decor on others, and even decoupage.
We use the table for camping and the top is peeling. It is used outdoors so I would like to refinish it so it stays nice for a long time. The table is 18" x 4'.

You could upholster the top, and make it both a coffee table and a foot rest.
