Wait until the tops of the vines have died before you begin harvesting. Potatoes are tubers and you want your plant to store as much of that flavorful starch as possible.
Hi Glorfrt7 😊 You didn't post what kind of potatoes that you're growing but generally speaking potatoes are ready after the foliage/vines wither, turn brown or yellow, and die off.
The plants die back.
When the tops dry off, they are ready to harvest
When the foliage looks dried out
When the plants die, it's time to dig.
