I believe that you have to re-sand them to get that out
Try a product from the dollar tree called Totally Awesome Orange . It's an all purpose degreaser . Spray it on and let it set for a bit before sand anything please. Because you would just be grinding all the muck into the beautiful butcher block.
Try TSP/Trisodium Phosphate/Sugar Soap to cut greasy messes. It's commonly available at hardware stores. You'll want to use rubber gloves as it can be extremely drying to the skin.
Mix cup of warm water with one cup of warm vinegar in a squirt bottle add a healthy squirt of Dawn dish soap. Spray-on let's sit for a minute and wipe off. The Dawn and the vinegar help break up the grease and by heating it it helps dissolve it faster making it easier to wipe away.
I would try natural products rather than grease solvents which will do damage to butcher block. Try making a paste with baking soda and water,apply and let sit overnight.Then wipe off and use blue dawn and water.
You might try Barkeepers Friend. It has never failed me. You can buy it at HomeDepot and other hardware stores.
If you know someone who has a steam cleaner you could borrow or maybe rent, that would do the trick easily with little physical effort to your body.

My go to is Dawn dishwashing detergent. I use it straight from the bottle and spread it around Let it sit for a while and then use hot water and a scraper and sponge
