Try using a paintable, textured wallpaper. You can get them in woodgrain patterns, beadboard style, etc. Then, paint it any color you like.

Home Depot and Lowes now carry peel and stick thin backsplash. Cheep and easy.
Since I do decoupage, I love the idea of a glass backsplash. Just have a hardware store cut a piece to fit, decorate it with cut out images gluing them face down on the back side, or if you don't like that idea, just paint the glass however you desire. Very inexpensive, original and easy to keep clean. p.s. if you do the decoupage part you also have to put a background paint on. This goes over the entire back.
Shiplap is trendy and easy to do as well as cost effective.
