Line your gardens with newspapers, cardboard heavy landscape fabric .first.Make Xs and spread the fabric back and plant, once that is done top with a few inches of cedar mulch
For borders, I like the look of river rock. Any little 'fencing' looks cheap and never looks straight. But your weed control has to be within the garden with a good protective barrier.
I used recyled, pressure-treated lumber we had on hand from a deck repair. It's held up for years.
I like the plastic edging, and you can add to this or cut this shorter, it is up to you. It comes in black and green colors, Best wishes, J.
You can use rocks, boulders, bricks, pavers, etc. You can also use a straight edge shovel and dig out a trench around your garden. I saw pictures where someone used wine bottles turned upside down to border their garden. It just goes to show, you can use almost anything.
It really depends on the size of your garden. Some edging is kind of expensive, but if you don't need a lot it's okay. I kind of favor the old-fashioned cement edging blocks, with a mowing strip on the outside. They come in straight and curved pieces.
